Did you know?... Limes contain a high concentration of citric acid, a weak organic acid which is a natural preservative.

Citric acid can constitute around 8% of the dry weight of one lime. In dried form, citric acid is a white, crystalline powder. As well as being naturally occuring it can also be commercially produced.
