Red Cabbage

Did you know?... Red Cabbage juice can be used as a pH indicator in science experiments.

Add another liquid to a glass of cabbage juice. The colour will remain purple for a neutral pH and change to red for an acid and greenish yellow for an alkaline solution.

The colour in red cabbage comes from a flavanoid called anthocyanin. This also gives plums and blueberries their purple colour.
