Cheeseology returns to the Science Festival for a fourth year to explore the science behind the production of this fascinating food. Hosted by dairy technologist Paul Thomas and journalist and cheese expert Patrick McGuiganCheeseology combines a tutored tasting of some of Europe's finest cheeses with an explanation of the factors influencing texture and flavour development in each variety.
